Prep: 30 - 60 minutes
Yields: 2 glasses
Remove green from strawberries.
Add water, vanilla and strawberries to a pot on medium high heat. Sprinkle with HALF of the sugar to bring out the juices.
When it starts to cook, keep stirring and when reduced by a quarter, add as much lemon juice as you like. I prefer more as I think it brightens the flavor, but you might not.
Also pour 1 dl of the juice into a bowl and stir in 2 tbsp gelatin (per quart of total product) and add to refrigerator (or freezer) and wait until completely cold.
Then add back to the simmering jam and stir for a minute.
Taste for sugar and/or lemon juice and store in sterilized jars.
