Jordbær Syltetøj (Strawberry Jam)

Since I can't get "Den Gamle Fabrik" jam here easily, it's not that difficult to do it yourself, although due to the flavor and sweetness of strawberries, it takes some playing around.

  • 1000 g Strawberries
  • 500 g Sugar
  • 1 Vanilla Pod (Scraped)
  • Juice from a lemon
  • 2 tsp Gelatin (flavorless)

    Clean and cut the strawberries. Depending on how you like your preserves I sometimes cut them in half.

    To a pot (I use a soup or stock pot to avoid it boiling over), add the strawberries, a cup of water, juice of 1/2 lemon per 500g of berries and sugar. I use half the amount of sugar to strawberries by weight, but it would depend on the sweetness of the berries. Leave to simmer for about an hour at medium heat, or until the berries get the consistency you prefer. You should skim off any impurities and bubbles from the top of the jam. Take about a cup of liquid (no berries) into a bowl and slowly whisk in the gelatin. I use 1 bag pr. 750g of berries. When its completely combined, add it back into the pot through a strainer to remove any undissolved gelatin. Leave it to simmer another 10 minutes or so.

    1.5 kg of berries yield about 3-4 standard size mason jars. I pressure boil them for 10 minutes, including the lid-inserts and add the jam straight out of the pressure cooker. After a few minutes you should hear the lids pop and you know they are sealed.
